Poster for 20+ Canned fish recipe.

These canned fish recipes are the ones I make most from a tin, from 10-minute lunches to tapas to dinners I'd happily serve to guests. After five years living in Portugal, where whole shops are devoted to conservas, I've stopped thinking of tinned fish as a backup plan. It's already cooked, it keeps for ages in the pantry, and it turns into a real meal fast.

    Wild Albacore Tuna Chowder

Inspired by a fish chowder I ate on repeat in Helsinki, made with canned albacore instead of fresh salmon. It's one pot, about 30 minutes, and finished with fresh dill and lemon zest.

    Air Fryer Tuna Melt

A thin swipe of mayo on the bread gives you a golden, panini-press crunch straight from the air fryer. Topped with my herby Mediterranean tuna salad, it's lunch in about 10 minutes.

Gilda-Style Green Olive Tapenade with Anchovies

Lavash Pizza with Clams and Fresh Mozzarella

A shortcut to New Haven-style clam pizza, with crispy lavash standing in for the coal-fired oven. Fresh shucked clams or a good can both work, and it's ready in about 20 minutes.

    Octopus Pasta (Tinned Octopus Ragu)

Octopus ragu was out of season every time I tried to order it in Italy, so I made my own from the pantry. Tinned octopus turns into a rich, silky ragu with pappardelle in 30 minutes, built just like a classic bolognese.

Is tinned fish the same as canned fish?

Yes. "Tinned" is the usual word in the UK and across Europe, and "canned" is more common in the US. Same fish, same tin.

Do you have to cook canned fish?

No. Commercially canned fish is cooked during processing, so it's safe to eat straight from the tin. That's why most of the recipes here only warm it through or crisp up the outside.

Should I buy canned fish packed in oil or water?

For nearly every recipe here, I reach for fish packed in olive oil. It's richer and more tender, and in recipes like the garlic sardines, octopus pasta, and Mediterranean tuna salad, the oil from the tin goes right into the dish.
