    Air Fryer Tuna Melt (with Mediterranean Tuna Salad)

    Who knew that the air fryer could turn a tuna melt into something legitimately crispy without heating up a skillet or turning on your oven? We use a clever mayo trick to get that golden, crunchy exterior you'd expect from a panini press - but faster and with zero babysitting.

    My version of a tuna melt uses Mediterranean tuna salad instead of the usual creamy stuff. Fresh herbs, olives, and a quick vinaigrette keep it bright and zingy. The whole thing comes together in under 10 minutes, and you can easily scale it up if you're feeding more than one.

    Why Air Fryer Tuna Melts Work

    The air fryer gives you that crispy, golden top without heating up a skillet. It's also just easier. Load the air fryer, set the timer, and walk away. Perfect for lunch when you're working from home and don't want to deal with cleanup.

    Ingredients You'll Need

    Ingredients for tuna melt.

    Canned tuna: Tuna in olive oil has better flavor and texture than water-packed. The oil that clings to the tuna after draining adds richness without needing extra mayo in the salad.

    Fresh herbs: Basil and parsley keep this tuna salad bright.

    Green olives: Castelvetrano or Spanish olives both work.

    Bread: Sourdough, white, or whole wheat all work.

    Cheese: Cheddar, gruyere, Swiss, provolone, or American - whatever melts well.

    Mayo for the outside: This is the secret to golden, crispy bread. You need way less than you think - a very thin layer does the job. Be sure to spread all the way to the edges!

    How to Make an Air Fryer Tuna Melt

    Step 1: Make the tuna salad. Make dressing, then add tuna, onion, olives, and herbs. Toss and taste. If you want the full recipe with more detail, check out my Mediterranean Tuna Salad.

    Step 2: Toast the bread. Spread mayo thinly on one side of each slice. Place mayo-side up in the air fryer for 3 minutes until golden brown on top.

    Step 3: Add cheese. Flip the bread and top each slice with cheese. Air fry another 90-120 seconds until bubbly.

    Step 4: Assemble. Pile tuna salad on one slice, add tomato, season with salt and pepper. Close, slice, eat immediately while it's still hot and crispy.

    Storage and Make-Ahead Tips

    The tuna salad keeps for 2-3 days refrigerated in an airtight container. Toast sandwiches fresh when you're ready to eat.

    Can You Make Air Fryer Tuna Melts Ahead?

    Hard pass. The bread gets soggy if you assemble these ahead, even 20 minutes. Make the tuna salad in advance if you want, but toast and assemble right before eating. The good news is it only takes 5 minutes start to finish.

    What's the Best Bread for Air Fryer Tuna Melt?

    I like a good sourdough - it's sturdy enough to hold up to the tuna salad and has great flavor. But I also love an old-fashioned potato bread - fluffy and browns well with the mayo. It feels more nostalgic - like the kind of sandwich my mom used to make me.

    How Do You Keep Tuna Melts from Getting Soggy?

    My two tips for anti-soggy tuna melts: make sure your tuna salad isn't wet - you want it well-seasoned but not swimming in dressing (or mayo). And toasting the bread + melting the cheese before adding tuna salad keeps our bread crispy. Then we assemble right before eating.

    Can You Use Regular Tuna Salad Instead of Mediterranean?

    Absolutely. Any tuna salad works here - classic mayo-based, store-bought, whatever you have. The air fryer technique stays the same. I prefer this Mediterranean version because it's lighter and the fresh herbs give it great flavor, but use what you like.

    Crispy, golden bread with melted cheese and Mediterranean tuna salad make a nostalgic, flavor-packed sandwich in under 10 minutes.


    Ingredients

    For the Mediterranean Tuna Salad:

    • 1 can tuna (preferably in olive oil), drained
    • 1 tablespoon red onion, diced or thinly sliced
    • 2 tablespoons green olives, diced
    • 2 tablespoons fresh basil, diced
    • 1 tablespoon flat leaf parsley, diced
    • 1 ½ teaspoons red wine vinegar
    • 1 teaspoon Dijon mustard
    • 1 small garlic clove, grated (or pinch of garlic powder)
    • Kosher salt and black pepper, to taste

    For the Sandwich:

    • 2 slices bread (sourdough, white, or whole wheat)
    • 1-2 teaspoons mayonnaise (1 teaspoon covers standard sandwich bread; use 2 for large bakery slices)
    • 2 slices cheese (cheddar, gruyere, or American)
    • 2 slices tomato

    Instructions

    1. Make the tuna salad. Whisk together red wine vinegar, Dijon, grated garlic, and a pinch of salt and pepper. Add red onion, drained tuna, olives, basil, and parsley. Toss. Taste and adjust seasoning.
    2. Toast the bread. Spread mayonnaise in a very thin layer on one side of each bread slice. Place bread slices mayo-side up in air fryer basket. Air fry at 400°F for 3 minutes until golden brown.
    3. Melt the cheese. Flip bread slices. Top each with 1 slice of cheese. Air fry 90-120 seconds until cheese is melted and bubbly.
    4. Assemble. Remove cheesy bread from air fryer. Pile tuna salad onto one slice of bread. Top with tomato slices and season with salt and pepper. Close sandwich with second bread slice. Slice and serve immediately.

    Notes

    • Pro Tip: Toast the bread first, then flip and add the cheese. This gets you crispy bread and perfectly melted cheese without overcooking. Cold tuna salad on hot toasted bread is the move here.
    • SWAP IT: Use any melting cheese you have - Swiss, provolone, or pepper jack all work great.
    • SCALE IT: Recipe easily doubles or triples. Just work in batches if your air fryer basket won't hold multiple sandwiches at once.
