    Lavash Pizza Recipe with Clams and Fresh Mozzarella

    It's an easy and sophisticated take on New Haven-style Clam Pizza. This Lavash Pizza Recipe with Clams and Fresh Mozzarella has crispy edges, a gooey top of cheese, and packs huge garlic, chili and lemon flavor. Grab the pizza cutter and let's get this party started!

    Lavash bread is a thin, soft, unleavened flatbread that is commonly used in Middle Eastern and Mediterranean cuisine. You can find these ready-made wonders in the deli section of your supermarket. Trader Joe's is famous for their lavash, but you can pick them up in almost any local market.

    Besides using them for wraps, sandwich rolls and dipping into sauces, lavash flatbread makes the perfect thin crust pizza. When I first tried it with traditional red sauce toppings, I loved how sublimely crispy the crust became in just a few minutes in the oven. And I just knew it would be the perfect vessel for a simple clam pizza.

    Frank Pepe's in New Haven Connecticut put Clam Pizza on the map. With just a handful of ingredients, this seafood marvel is the height of simplicity with huge flavor. It's one of my favorite seafood pizza recipes of all time. And since most of us don't have a coal-fired oven in the yard to whip up a traditional clam pizza, lavash is the perfect shortcut crust!

    Ingredients you'll need to make this recipe:

    Before we get to the step by step directions, a few notes about the ingredients:

    • Lavash Flatbread: Store bought is ideal! Or make your own using this easy recipe.
    • Garlic Olive Oil for Pizza: It's the 5-minute white pizza sauce that will change your life! Follow the link to get the details.
    • Parmesan Cheese: I love the sharp nuttiness of Parmesan in this pizza. Substitute Asiago or Romano, if needed.
    • Shucked Clams: Nobody has time for clam shells on pizza. Buy shucked clams or even a quality can of clams and you're good to go!

    Step by step instructions:

    1. Prep lavash flatbread

    Preheat oven. Cover a rimmed baking sheet with parchment paper and place lavash on the parchment.

    Brush a few tablespoons of the garlic olive oil sauce for pizza on the lavash. Sprinkle shredded Parmesan cheese over the crust. Then evenly distribute the clams across the parmesan-covered crust.

    Finally, break up the ball of fresh mozzarella over the lavash flatbread pizza.

    2. Bake Until Crispy

    Transfer the thin crust pizza to the oven and bake for 8-10 minutes, until the crust is crispy and the cheese is melted. Switch to broil for a minute to brown the top.

    3. Garnish and Serve

    Remove pizza from oven. Top with lemon zest curls, fresh parsley and a drizzle of garlic olive oil. Serve immediately.

    Can I use any type of lavash bread for the pizza?

    Yes, you can use any type of lavash bread you prefer. However, it's important to note that the thicker the bread, the less crispy your pizza crust will be.

    Can I make the lavash bread from scratch?

    Yes, you can make your own lavash bread from scratch. I've made this Delicious Lavash Recipe several times and it's always been a big hit.

    What other toppings can I use on lavash pizza?

    Lavash pizza is very flexible - you can use any of your favorite toppings. But it's important not to overload the pizza, as this can make the bread soggy. But a thin coat of traditional pizza sauce, along with a handful of your favorite veggies like black olives, red onion and chili flakes topped with gooey fresh mozzarella and your homemade pizza party is ready to rock!

    How to store leftover lavash pizza?

    Lavash pizza tastes best the day you prepare it. If you have leftovers, store in an airtight container and reheat in a skillet (covered) over medium heat until the crust is crisp and the cheese melts. Alternately, heat in the microwave until just warmed through.

    Ingredients

    1 lavash flatbread

    4 tablespoons garlic olive oil pizza sauce, divided

    3 tablespoons Parmesan cheese, shredded

    4 ounces fresh mozzarella cheese

    ⅓ cup shucked clams

    2 tablespoons fresh Italian parsley, for serving

    Lemon zest, for serving


    Instructions

    1. Preheat oven to 400 ℉. Cover a rimmed baking sheet with parchment paper and place lavash on the parchment. Brush a few tablespoons of the garlic olive oil sauce for pizza over the top of the lavash. Sprinkle shredded Parmesan cheese over the crust. Then evenly distribute the clams across the parmesan-covered crust. Finally, break up the ball of fresh mozzarella over the lavash flatbread pizza.
    2. Transfer the thin crust pizza to the oven and bake for 8-10 minutes, until the crust is crispy and the cheese is melted. Switch to broil for a minute to brown the top. 
    3. Remove lavash bread pizza from the oven. Top with lemon zest curls, fresh parsley and a drizzle of garlic olive oil. Serve immediately.

    Notes

    Store-bought lavash flatbread is ideal here! If you can't find it or want to make your own, this lavash recipe is quick and simple.
