Lavash Pizza Recipe with Clams and Fresh Mozzarella

1 lavash flatbread

4 tablespoons garlic olive oil pizza sauce, divided

3 tablespoons Parmesan cheese, shredded

4 ounces fresh mozzarella cheese

1/3 cup shucked clams

2 tablespoons fresh Italian parsley, for serving

Lemon zest, for serving


Instructions

  1. Preheat oven to 400 ℉. Cover a rimmed baking sheet with parchment paper and place lavash on the parchment. Brush a few tablespoons of the garlic olive oil sauce for pizza over the top of the lavash. Sprinkle shredded Parmesan cheese over the crust. Then evenly distribute the clams across the parmesan-covered crust. Finally, break up the ball of fresh mozzarella over the lavash flatbread pizza.
  2. Transfer the thin crust pizza to the oven and bake for 8-10 minutes, until the crust is crispy and the cheese is melted. Switch to broil for a minute to brown the top. 
  3. Remove lavash bread pizza from the oven. Top with lemon zest curls, fresh parsley and a drizzle of garlic olive oil. Serve immediately.

Notes

Store-bought lavash flatbread is ideal here! If you can't find it or want to make your own, this lavash recipe is quick and simple.
