    As a seafood recipe developer, I've tested dozens of ways to cook mahi mahi at home, and this air fryer mahi method is my absolute go-to on busy weeknights. The combination of flavorful pesto, crispy panko, and the air fryer's magic touch creates restaurant-quality fish without the fuss. If you've been hesitant to cook fish at home, this recipe will change everything.

    What makes this air fryer mahi mahi recipe work so beautifully is the contrast between the crunchy, golden-brown panko exterior and the tender, flaky fish inside. The pesto-mayo mixture serves two purposes, adding incredible flavor and helping the panko stick to the fish. I've made this recipe countless times, and it delivers consistent results, even when I'm rushing to get dinner on the table.

    Ingredients Needed For Air Fryer Mahi Mahi

    Before we get to the step by step instructions, a few notes about the ingredients:

    • Mahi Mahi fillets - I use 5-ounce portions, but any size works with adjusted cooking times.
    • Panko - Japanese-style breadcrumbs create that perfect crunch. In a pinch, regular breadcrumbs work but won't be quite as crispy.
    • Olive oil - A little helps the panko brown beautifully in the air fryer. Avocado oil is a good substitute if you prefer.
    • Pesto - Make my easy pistachio pesto, or grab that jar of store-bought off your pantry shelf.
    • Mayonnaise - Greek yogurt can substitute in a pinch.

    Step By Step Instructions

    Step 1: Prep Fish

    Preheat your air fryer. Dry mahi mahi fillets thoroughly with paper towels.

    Step 2: Prep Toppings

    Mix the pesto and mayo in one bowl, then combine the panko, olive oil, Parmesan, salt and pepper in another.

    Step 3: Top Fish

    Brush the pesto mixture on top of each fillet, then generously press the panko mixture onto the fish. Don't be shy! That crust is what makes this dish special.

    Step 4: Air Fry + Serve

    Air fry until the crust is golden and the fish reaches 140-145 degrees internally. The exact time depends on your fillet thickness and air fryer model.

    Can I Use Frozen Mahi Mahi Without Thawing?

    If starting with frozen fillets, air fry at 375 (without coating!) for about 4 minutes, until the fish is thawed. Use paper towels to press the fish and remove excess moisture. Then brush on your pesto mayo mix and top with panko crumbs, then air fry for 5-7 minutes until cooked through and golden.

    How Do I Know When Mahi Mahi is Cooked Perfectly?

    Mahi mahi should reach an internal temperature of 145 degrees on a quick-read thermometer. You'll notice it turns from translucent to opaque white and flakes easily with a fork. I always start checking at the 6-minute mark by using my digital thermometer or gently flaking the fish with a fork. Since fish continues cooking slightly after removal from heat, it's better to pull it just a touch early than risk overcooked mahi!

    Can I Make This Recipe Ahead of Time?

    This fish recipe is best enjoyed freshly cooked, but you can prep components ahead of time to streamline the process. Mix the pesto-mayo spread and panko mixture up to a day in advance and store separately in the refrigerator. When ready to cook, simply coat the fish and air fry.

    Description

    Here's how to make perfect mahi mahi in the air fryer in just 10 minutes. This fish recipe is foolproof and full of flavor!


    Ingredients

    Units Scale
    • 2 5-oz Mahi Mahi fillets, thawed
    • 3 tablespoons panko breadcrumbs
    • 2 teaspoons extra virgin olive oil
    • 1 tablespoon Parmesan, grated
    • 1 tablespoon pesto (homemade or store-bought)
    • 1 teaspoon mayonnaise
    • Kosher salt and black pepper, to taste

    Instructions

    1. Preheat air fryer. Dry fish fillets well with paper towels. 
    2. In a small bowl combine 1 tablespoon pesto with 1 teaspoon mayonnaise. In a second bowl, combine 3 tablespoons panko crumbs with 2 teaspoons olive oil and, 1 tablespoon grated Parmesan and a pinch of salt and pepper. 
    3. Using a pastry brush, cover the top of the Mahi Mahi fillets with a thin coat of the pesto mixture. Divide the seasoned panko crumbs and sprinkle over the fish. Pat down lightly to ensure the crumbs stick to the fish. 
    4. Air fry fish for 6-8 minutes, or until the panko crust is golden brown and the internal temperature of the fish reaches 145 degrees. (Precise cooking time will depend on the thickness of your fish fillets.) 

    5. Serve with lemon wedges and fresh basil for garnish.

    Notes

    • Leftover mahi mahi can be stored in an airtight container for up to 2 days. To reheat, use your air fryer at 350 degrees for 2-3 minutes to help restore some crispness.
    • If your fish fillets are different sizes, arrange them in the air fryer basket with thinner ends toward the center and thicker portions toward the edges for more even cooking.
    • Don't have mahi mahi? This recipe works beautifully with any firm white fish like cod, halibut, or even tilapia fillets.
