Why This Recipe Works
Getting this glaze to caramelize instead of just sitting on the salmon took some trial and error. I did eight rounds of testing before the cube size and the glaze ratio lined up. I really wanted the edges to char, since that's where all the flavor concentrates. But if I cut the salmon too small, it turned dry and chalky before the sugar had a chance to catch.
A one-inch cube is the sweet spot, enough surface area for the honey and soy to reduce and char, enough mass that the inside stays tender. The caramelization isn't something to avoid, it's the very best part.

Cut salmon into one-inch cubes, season, and toss in the cooled glaze while the air fryer preheats.

3: Air fry salmon bites

- 1 ½ tablespoons light soy sauce
