This air fryer tilapia recipe combines a crispy panko crust with the bright flavors of pesto - giving you restaurant-quality fish in under 10 minutes with just a handful of kitchen staples.

    • Panko Breadcrumbs - Japanese-style breadcrumbs create a lighter, crispier coating than regular breadcrumbs. For a gluten-free option, use gluten-free panko.
    • Parmesan Cheese - Adds savory depth to the crust. Substitute asiago or grana padano.
    • Pesto - Store-bought works perfectly here, though homemade is wonderful if you have it. Any variety (traditional basil, sun-dried tomato, spicy) works well.
    • Mayonnaise - Substitute Greek yogurt for a tangier flavor.

    • Dry fish thoroughly: Pat fillets completely dry with paper towels before topping with pesto mayo and panko.
    • Don't overcrowd: A single layer of fish with space between fillets works best for air circulation and even browning.

    Step By Step Instructions

    Step 1: Prep the Fish

    Preheat air fryer. Dry tilapia fillets.

    Mix pesto and mayo until smooth. In a separate bowl, mix panko, olive oil, Parmesan, salt and pepper, tossing to combine.

    Step 4: Air Fry to Perfection

    Place coated fillets in air fryer basket without overcrowding. (If needed, spray air fryer basket with nonstick spray or use a liner.) Cook for 6-8 minutes until the crust is golden brown and the fish reaches an internal temperature of 140-145 degrees. Serve immediately with lemon wedges and fresh basil.

    Can I Use Frozen Tilapia Without Thawing?

    While this recipe works best with thawed fillets, you can cook from frozen in a pinch. Air fry fillets for 3-4 minutes to thaw them before brushing with pesto mayo and topping with panko. Then return to air fryer until fish is cooked through and the topping is golden brown.

    How Do I Know When Tilapia Is Done?

    Tilapia is cooked when it's opaque throughout and flakes easily with a fork. For perfect doneness, use an instant-read thermometer - the internal temperature should reach 140-145 degrees. Air fryer tilapia typically takes 6-8 minutes, but cooking time varies based on fillet thickness and your specific air fryer model.

    What Can I Substitute for Pesto?

    If you don't have pesto on hand, try these alternatives:

    • Combine 1 tablespoon of olive oil with 1 teaspoon each of minced garlic and dried herbs (basil, oregano, parsley)
    • Use finely diced olive tapenade for a Mediterranean twist
    • Try sun-dried tomato spread for a tangy variation
    • Simply mix mayonnaise with a teaspoon of Dijon mustard and herbs

    The key is having something flavorful that will help the panko adhere to the fish.

    Description

    This air fryer tilapia features a golden, crispy panko-pesto crust that takes just minutes to make. The secret is a mayo-pesto layer that keeps the fish perfectly moist while the panko gets beautifully crunchy. Ready in under 10 minutes, it's the perfect weeknight fish dinner.


    Ingredients

    • 2 5-ounce tilapia fillets, thawed (or 3 smaller fillets)
    • 3 tablespoons panko
    • 2 teaspoons extra virgin olive oil
    • 1 tablespoon Parmesan, grated
    • 1 tablespoon pesto
    • 1 teaspoon mayonnaise
    • Salt and pepper, to taste

    Instructions

    1. Preheat air fryer. Dry fish fillets well with paper towels. 
    2. In a small bowl combine 1 tablespoon pesto with 1 teaspoon mayo. In a second bowl, combine 3 tablespoons panko crumbs with 2 teaspoons olive oil, 1 tablespoon grated Parmesan and a pinch of salt and pepper. 
    3. Using a pastry brush, cover the top of the tilapia fillets with a thin coat of the pesto mixture. Divide the seasoned panko crumbs and sprinkle over the fish. Pat down lightly to ensure the crumbs stick to the fish. 
    4. Air fry fish at 390 degrees for 6-8 minutes, or until the panko crust is golden brown and the internal temperature of the fish reaches 140-145 degrees. (Exact cooking time will depend on the thickness of your fish fillets.) 
    5. Serve with lemon wedges and fresh basil for garnish.

    Notes

    • Make Ahead: Prepare the pesto-mayo mixture and seasoned panko up to a day ahead and refrigerate separately. Top the fish just before cooking.
    • Storage: Refrigerate leftovers in an airtight container for up to 2 days.
    • Reheating: For the best texture, reheat in the air fryer at 350 degrees for 2-3 minutes. This revives some of the crispiness without drying out the fish.
