    Greek Salmon Steak Recipe

    The perfect Greek marinated salmon steak recipe that turns your weeknight fish dinner into a rich and flaky salmon masterpiece. Packed full of flavor, this is the recipe you'll come back to over and over again. With less than 20 minutes of active prep and cooking, it's a simple dish with a huge flavor payoff.

    Years ago I was thumbing through a 1960's cookbook from my dear friend's Greek Orthodox Church in Charleston, South Carolina, when I came across a recipe for salmon steaks. I made some modifications to suit the modern pantry (and my over-use of garlic), and this recipe was born.

    While it can certainly be made with salmon fillets, salmon steaks keep tender and moist under the quick broil method, and the marinade creates luscious flavor throughout the fish.

    Add this to your rotation of fish dinners, along with Mediterranean One-Pan Salmon and Rice, Roasted Red Snapper, Broiled Parmesan Pollock.

    • Salmon: choose steaks of similar size and thickness to ensure even cooking times.
    • Dried oregano: while I usually choose fresh herbs to pair with fish, dried oregano adds the perfect punch to these Greek salmon steaks. Substitute Italian Seasoning, if needed.
    • Chili flakes: optional, but adds great flavor. The finished dish isn't spicy, just well-balanced.
    • Honey: another balancing element in our marinade - substitute a pinch of sugar or equal amount of agave.

    How to cook salmon steaks:

    Make Greek citrus marinade. Add 3 tablespoons of dressing to bowl of sliced scallions.

    Pour remaining sauce over salmon steaks, turning to coat. Marinate for 30 minutes.

    Broil marinated salmon steaks on a foil-covered baking sheet for 6-8 minutes, until your desired doneness.

    Serve with scallion relish and lemon wedges.

    What goes well with salmon steak?

    The same sides that work well with salmon fillets go great with salmon steaks. Mediterranean Basmati Rice and Garlic Lemon Green Beans are two of my favorite options.

    Is salmon steak the same as salmon fillet?

    The meat is the same, but the cuts are different. Salmon steaks are cut crosswise, through the spine, so each piece of fish has bones. Salmon fillets are cut lengthwise, parallel to the spine.

    Can you buy boneless salmon steaks?

    Some fishmongers can accommodate a boneless salmon steak, but it's rare. If you're looking for a (nearly) boneless salmon experience, fillets are a better option.

    What sauce goes with salmon steak?

    The scallion relish with this recipe is the perfect fresh garnish for the salmon steak. If you're looking for a more traditional seafood sauce, try my easy Homemade Tartar Sauce. Or whip up Creamy Lemon Butter Sauce for a 5-star salmon experience.

    How to cook salmon correctly?

    Description

    This retro cut of fish is trendy again! Marinate it in this ultra-flavorful Greek dressing  and broil it for just a few minutes for the perfect weeknight dinner. 


    Ingredients

    Scale

    4 salmon steaks, about 1-1 ¼ inches thick

    ¼ cup extra virgin olive oil

    ¼ cup fresh squeezed lemon juice

    3 large cloves garlic, grated

    2 teaspoons honey

    1 ½ teaspoons dried oregano

    1 ½ teaspoons coarse kosher salt

    ½ teaspoon black pepper

    ¼ teaspoon red pepper flakes (optional)

    4-5 scallions, whites and light green parts only (about ½ cup)


    Instructions

    1. Combine all ingredients for Greek citrus marinade. Reserve 3 tablespoons of the marinade in a small bowl. Pour remaining sauce over salmon steaks, turning to coat. Cover and marinate for 30 minutes. 
    2. While fish is marinating, thinly slice scallions. Toss into the reserved vinaigrette. Stir, then set aside. Right before serving, taste and adjust seasoning. 
    3. Preheat broiler and arrange oven rack about 5 inches from the heat source. Arrange marinated salmon steaks on a foil-covered baking sheet. Broil for 6-8 minutes, until your desired doneness.
    4. Serve salmon with scallion relish and lemon wedges.

    Notes

    • Choose salmon steaks of similar size and thickness so they'll cook through on the same timeline. 
    • Substitute shallots for scallions in the Greek relish, if you prefer.

      At the last minute, I realized I was out of honey, so I substituted maple syrup. It worked, but I'll for sure be making it again with honey next time. This was a quick and easy recipe that my crew loved!

        Maple syrup is a good option, just to add a little balancing sweetness. Agave or a pinch of sugar would also work. Thanks for the helpful review!
