Greek Salmon Steak Recipe

Description

This retro cut of fish is trendy again! Marinate it in this ultra-flavorful Greek dressing  and broil it for just a few minutes for the perfect weeknight dinner. 


Ingredients

Scale

4 salmon steaks, about 1-1 1/4 inches thick

1/4 cup extra virgin olive oil

1/4 cup fresh squeezed lemon juice

3 large cloves garlic, grated

2 teaspoons honey

1 1/2 teaspoons dried oregano

1 1/2 teaspoons coarse kosher salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

4-5 scallions, whites and light green parts only (about 1/2 cup)


Instructions

  1. Combine all ingredients for Greek citrus marinade. Reserve 3 tablespoons of the marinade in a small bowl. Pour remaining sauce over salmon steaks, turning to coat. Cover and marinate for 30 minutes. 
  2. While fish is marinating, thinly slice scallions. Toss into the reserved vinaigrette. Stir, then set aside. Right before serving, taste and adjust seasoning. 
  3. Preheat broiler and arrange oven rack about 5 inches from the heat source. Arrange marinated salmon steaks on a foil-covered baking sheet. Broil for 6-8 minutes, until your desired doneness.
  4. Serve salmon with scallion relish and lemon wedges.

Notes

  • Choose salmon steaks of similar size and thickness so they'll cook through on the same timeline. 
  • Substitute shallots for scallions in the Greek relish, if you prefer.
