    Baked Flounder Recipe with Parmesan Crust

    This simple Baked Flounder Recipe with Parmesan Seasoning is packed with Italian flavor, making it an easy addition to your weekly meal planning. No dredging or breading required, just a one-bowl mixture and 15-minute bake and dinner is on the table!

    If you're wondering how to add a delicious new seasoning for baked flounder to your dinner time repertoire, here's your recipe.

    Use flounder fillets, or your favorite white fish, in this recipe. The parmesan crumbs add color and flavor to anything they're sprinkled over. 

    Once the fish is in the oven, you're only 15 minutes from dinner. Just enough time to warm up Fresh Tomato Spaghetti Sauce, grate some parmesan, and whip up a Mediterranean Tossed Salad. 

    What you'll need to make this recipe:

    Before we get to the step by step directions, a few notes on the ingredients:

    Fish: this fish recipe calls for flounder, a flaky white fish with generally thin fish fillets. Substitute sole, haddock, cod, grouper or hake. Almost any flaky fish with a mild flavor will be a good fit for this recipe. For fillets like cod that are usually thicker than flounder, add a few minutes cooking time. Fresh fish or frozen and thawed fillets work in this easy recipe.

    Bread crumbs: the recipe calls for Italian seasoned bread crumbs mixed with parmesan cheese. If using unseasoned bread crumbs, add ½ tablespoon of dried Italian seasoning and ¼ teaspoon kosher salt. If using panko bread crumbs, add the same seasoning mixture, and you may need an extra tablespoon of olive oil on the bread crumbs, as well.

    Step by step instructions:

    Step 1: Prepare Parmesan crumb topping

    Preheat oven to 400°. In a small bowl or shallow dish, combine bread crumbs, Parmesan, lemon zest, salt and pepper.

    Drizzle olive oil over the mixture and mix until the crumbs are sandy.

    Step 2: Assemble and bake fish

    Dry fish well with paper towels, then place fillets on baking sheet covered in aluminum foil or parchment. Spoon seasoned parmesan crumbs over the fish, pressing gently onto the top of the fillets.

    Bake in preheated oven for 8-10 minutes, until fish is cooked through. Switch to broil for 2 minutes for a deeper golden brown top. 

    Step 3: Garnish and serve

    To serve, spoon spaghetti sauce on a serving plate. Lay fish fillets over the sauce. Garnish with fresh basil, parmesan and lemon wedges. Serve with crispy gnocchi or pasta dressed in sauce.

    FAQ's and Serving Suggestions:

    What kind of fish can I use to make this recipe?

    Any mild white fish fillets will work in this recipe. So grab that bag of frozen haddock fillets in your freezer, or whatever is on sale at the local market this week. Dover sole is probably the most similar fish to flounder, but use what you have. Adjust baking time if the fillets are thicker than flounder fillets, especially something like cod, which can be twice as thick as a flounder fillet.

    What to serve with baked flounder?

    Some of my favorite side dishes include Garlic Lemon Seasoned Green Beans, Mediterranean Tossed Salad and Garlic Bread Baguette. And I absolutely love serving the fish over Fresh Tomato Spaghetti Sauce with fresh basil and parmesan. The perfect pescatarian version of Chicken Parm!

    Do you have to flip flounder?

    For a baked recipe like this one, no need to flip your fish fillets. Just bake until the fish is cooked through and your bread crumb topping is golden brown.

    How to store leftover flounder?

    To store, transfer fish from sheet pan to an airtight container and keep in the refrigerator for up to 3 days. The best way to reheat is in the oven with a gentle heat of 350℉ for 6-7 minutes, until just heated through.

      Made this last night and we loved it. The parmesan topping is perfection. Might make it again this week with the cod in my freezer!
