Ingredients
5-6 flounder fillets, skinless
1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese, plus more for topping
3 tablespoons extra virgin olive oil
1 teaspoon lemon zest
1/2 teaspoon coarse kosher salt
1/4 teaspoon black pepper
1 1/2 cups Spaghetti Sauce, for serving (optional)
Pasta or gnocchi, for serving (optional)
Instructions
- Preheat oven to 400°. In a small bowl or shallow dish, combine bread crumbs, Parmesan, lemon zest, salt and pepper. Drizzle olive oil over the mixture and mix until the crumbs are sandy.
- Dry fish well with paper towels, then place fillets on baking sheet covered in aluminum foil or parchment. Spoon seasoned parmesan crumbs over the fish, pressing onto the top of the fillets. Bake in preheated oven for 8-10 minutes, until fish is cooked through. Switch to broil for 2 minutes for a deeper golden brown top.
- To serve, spoon spaghetti sauce on a serving plate. Lay fish fillets over the sauce. Garnish with fresh basil, parmesan and lemon wedges. Serve with crispy gnocchi or pasta dressed in sauce.
Notes
You can substitute almost any mild white fish fillets in this recipe. Dover sole is probably the most similar fish to flounder, but use what you have. Adjust baking time if the fillets are thicker than flounder fillets, especially something like cod, which can be twice as thick as a flounder fillet.
