    Crispy Air Fryer Shrimp Chimichangas

    These Crispy Shrimp Chimichangas lived in my imagination for months before I started testing and perfecting them in the air fryer. I almost never order chimichangas because I don't do a lot of deep fried foods...so I wanted something rich and delicious, but not requiring a vat of oil.

    This version creates our shrimp and veggie filling in the air fryer first, then after a mix into creamy cheese, wraps that filling inside a spice-brushed tortilla. 10 minutes back in the air fryer gets you a chimichanga so crunchy it shatters like it just came out of the deep fryer. And a gooey filling that is truly irresistible. Twenty five minutes start to finish, no hour of oven time required.

    If you're like me - a huge fan of quick seafood dinners - you know I lean on the air fryer for consistent, delicious results on weeknights. It's a similar trick behind my garlic butter shrimp and teriyaki shrimp, just pointed at a different format this time.

    Why This Recipe Works

    The filling does double duty as the flavor and the glue. Cream cheese binds everything together so the chimichanga holds its shape instead of spilling out the second you bite in, while the shredded cheese is what gives you that stretch when you pull it apart. Cooking the shrimp and vegetables separately from the wrap means neither one turns rubbery or soggy, and brushing the outside with seasoned oil before air frying is what gets you a shell that browns and crisps instead of drying out.

    How to Make Air Fryer Shrimp Chimichangas

    1. Cook the shrimp and veggies

    Toss the peppers and onions with oil and taco seasoning, then air fry until they're sizzling and starting to soften. Toss the shrimp with oil and more taco seasoning, lay it over the vegetables, and air fry again until the shrimp is just cooked through.

    2. Build the creamy filling

    Stir cream cheese, lime juice, and taco seasoning together until smooth, then fold in the shrimp, vegetables, shredded cheese, and cilantro. This is your last chance to taste and adjust the flavor, since everything is now fully cooked.

    3. Roll and seal

    Divide the filling between the tortillas and roll tightly, tucking in the sides as you go. Combine remaining neutral oil with taco seasoning and brush the outside of the wrapped chimichanga. This is what turns the tortilla into a crisp, golden shell instead of a pale, sad wrap.

    4. Air fry and serve

    Place seam-side down and air fry until golden, then flip, brush with more seasoned oil, and finish until the whole thing is deeply golden and crisp. Let them rest in the basket for a few minutes before serving.

    Can I make these without shrimp?

    Surimi is a great low-cost swap here, or use leftover flaked salmon or white fish. Fold either into the cheese mixture in place of the shrimp and skip the initial cook step since they're already cooked. If you're cooking for meat-eaters, shredded rotisserie is a good option.

    Why is my chimichanga unrolling in the air fryer?

    The seam needs a little help staying shut. Rub a small amount of oil along the inside edge before rolling, and always place them seam-side down first so the weight of the chimichanga holds it closed while it starts to crisp.

    Description

    A creamy shrimp filling wrapped in a flour tortilla and air fried until crazy-crispy.


    Ingredients

    • ½ pound medium shrimp, peeled and deveined
    • 1 cup bell peppers, chopped
    • ½ cup onion, chopped
    • 2 tablespoons neutral oil, divided
    • 2 tablespoons taco seasoning, divided
    • ¼ cup cream cheese
    • ½ cup shredded cheese
    • 2 tablespoons cilantro, diced
    • 1 tablespoon lime juice
    • 2 large flour tortillas, 10 to 12 inch

    Instructions

    1. Toss the peppers and onions with 1 teaspoon oil and 1 teaspoon taco seasoning. Air fry at 400°F for 4 to 5 minutes, until sizzling. Toss the shrimp with 1 teaspoon oil and 2 teaspoons taco seasoning, lay it over the vegetables, and air fry 3 to 4 minutes more, until cooked through.
    2. Stir the cream cheese, lime juice, and 2 teaspoons taco seasoning together in a large bowl. Add the shrimp, vegetables, shredded cheese, and cilantro, then toss to combine. Taste and adjust seasoning, this is fully cooked, so now's your chance.
    3. Divide the filling between the tortillas. Roll tightly, tucking in the sides as you go. Mix the remaining 1 tablespoon oil with 1 teaspoon taco seasoning and brush all over the outside of each chimichanga.
    4. Place seam-side down in the air fryer. Air fry at 400°F for 4 to 5 minutes, until golden. Flip, brush with more seasoned oil, and air fry 3 to 4 minutes more. Rest in the basket 2 to 3 minutes before serving.

    Notes

    • If the seam won't stay shut, rub a little oil on the inside edge before rolling.
    • Surimi or leftover flaked salmon or white fish both work in place of shrimp, fold either into the cheese mixture and skip the cook step.
    • Serve with shredded lettuce, taco truck green sauce, and sour cream.
