    Air Fryer Halibut with Crispy Almond Parmesan Crust

    After testing a few different types of premium fish in the air fryer, (and surviving a few expensive dinner disasters along the way), I've found the perfect method for air fryer halibut. This method combines an almond-parmesan crust with bright citrus notes - giving you foolproof fish in under 10 minutes. No fancy chef skills or crazy ingredients required, I promise.

    As a professional seafood recipe developer, I've worked with halibut from Alaska to the Atlantic, and I've learned that this premium fish deserves special treatment.

    What makes this halibut in the air fryer so successful is the balance between protecting the delicate fish and adding flavor and texture. After lots of tests, I found this technique consistently delivers foolproof results, even if your relationship with cooking fish has been... complicated.

    Ingredients for Air Fryer Halibut

    • Halibut Fillets - Unlike fattier fish, halibut is lean and delicate, making it important to protect it during cooking. Look for wild-caught Pacific halibut (like Sena Sea’s!) for the best sustainability and flavor.
    • Sliced Almonds - The thin texture of sliced almonds is perfect for the short cooking time. Substitute slivered almonds, if needed.
    • Parmesan Cheese - Adds umami and salt while helping the crust turn golden. Substitute asiago or grana padana.
    • Mayonnaise - Creates the protective layer that locks in moisture. Full fat is ideal.
    • Seasonings - A simple mix of garlic powder, kosher salt and sweet paprika is all you need. Substitute your favorite all-purpose seasoning.

    Pro Tips for Success with Air Fried Halibut

    • Watch cooking time: Halibut is leaner than many other white fish, making it prone to overcooking. Start checking at 5 minutes, especially with thinner portions.
    • Check your basket: If using an air fryer basket that tends to stick, lightly spray with oil or use a parchment liner under the fish.
    • Pay attention to temperature: Unlike some more forgiving fish, halibut is best served at 130-135 degrees for optimal texture. It will continue cooking slightly after removal.
    • Source matters: Wild Pacific halibut often has better flavor and texture than farm-raised alternatives. The quality difference is noticeable in simple preparations like this one!

    Step by Step Instructions

    Step 1: Prep the Halibut

    Preheat your air fryer. Dry fillets thoroughly with paper towels. Sprinkle lightly with kosher salt.

    Step 2: Prepare Toppings

    In a small bowl, mix mayo, lemon juice, garlic powder, salt, and paprika until smooth. In a second bowl, combine sliced almonds and Parmesan.

    Step 3: Top Halibut

    Brush top of each fillet with a thin layer of the lemon-mayo. Sprinkle the almond-Parmesan mixture on top, gently pressing to adhere.

    Step 4: Air Fry to Perfection

    Place coated fillets in air fryer basket with at least 1 inch between pieces to ensure proper air circulation. Cook for 6-8 minutes until the crust is golden and the center of the fish just turns from translucent to opaque.

    Step 5: Rest Briefly

    Allow the halibut to rest for 1-2 minutes after cooking, which helps redistribute moisture throughout the fillet. Garnish with fresh chives or parsley and serve immediately.

    Why is Halibut Special?

    Halibut is often called the "steak of seafood" for good reason. As the largest flatfish in the ocean (they can grow to over 500 pounds!), halibut offers meaty fillets with a clean, subtly sweet flavor. Unlike some white fish that can be watery or flaky to a fault, properly cooked halibut has a firm but tender texture that holds together beautifully on the fork. This air fryer method gives you all the benefits of this premium fish with virtually no risk of overcooking - a common issue when preparing halibut with traditional methods.

    How Do I Know When Halibut is Done?

    Halibut is properly cooked when it just turns opaque throughout but still appears moist. For optimal texture, aim for an internal temperature of 130-135 degrees  (slightly lower than the 145 degree recommendation for most fish). At this temperature, halibut maintains its moisture while being fully cooked. The fish should flake gently when pressed with a fork but still hold its shape well.

    Because halibut is leaner than many other fish, the line between perfectly cooked and overdone is thin. It's always better to slightly undercook (you can always add another minute) than to overcook, which can't be reversed.

    Can I Use Frozen Halibut Without Thawing?

    While this recipe works best with thawed fillets, you can cook from frozen if necessary. For frozen halibut, air fry at 375 degrees for 5 minutes to partially thaw the fish. Remove, quickly pat dry, apply the lemon-mayo mixture and almond-Parmesan topping, then return to the air fryer until the fish registers 130-135 degrees internally, about 5-7 more minutes depending on thickness.

    Ingredients

    • 2 6-oz halibut fillets, thawed
    • 2 tablespoons Parmesan cheese, shredded
    • 2 tablespoons sliced almonds
    • 2 teaspoons mayo
    • 1 teaspoon lemon juice, plus wedges, for serving
    • ¼ teaspoon garlic powder
    • ¼ teaspoon kosher salt

    • Pinch sweet paprika

    Instructions

    1. Preheat air fryer. Mix parmesan cheese and sliced almonds in one small dish. In a second dish, mix mayonnaise, lemon juice, salt, garlic powder and paprika. 
    2. Dry halibut fillets well with paper towels. Sprinkle lightly with kosher salt. Brush the top of each fish fillet in the lemon mayo, then sprinkle generously with a coating of the almond parmesan mixture.

    3. Air fry fish for 6-8 minutes at 390 degrees, or until the topping is golden brown and the fish is cooked through. Garnish with chives and lemon wedges.

    Notes

    • Fillets: For best results, look for halibut fillets around 1-inch thick. Thinner portions cook faster (check at 4 ½ minutes), while thicker cuts may need 1-2 minutes longer. Unlike other white fish, halibut is at its juiciest at 130-135 degrees internal temperature. It will continue cooking slightly after removal, so don't wait until it reaches 145 degrees, or it may dry out.
    • Check basket: If using an air fryer basket that tends to stick, lightly spray with oil or use a parchment liner under the fish.
