Scale
- 2 6-oz halibut fillets, thawed
- 2 tablespoons Parmesan cheese, shredded
- 2 tablespoons sliced almonds
- 2 teaspoons mayo
- 1 teaspoon lemon juice, plus wedges, for serving
- 1/4 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- Pinch sweet paprika
Instructions
- Preheat air fryer. Mix parmesan cheese and sliced almonds in one small dish. In a second dish, mix mayonnaise, lemon juice, salt, garlic powder and paprika.
- Dry halibut fillets well with paper towels. Sprinkle lightly with kosher salt. Brush the top of each fish fillet in the lemon mayo, then sprinkle generously with a coating of the almond parmesan mixture.
- Air fry fish for 6-8 minutes at 390 degrees, or until the topping is golden brown and the fish is cooked through. Garnish with chives and lemon wedges.
Notes
- Fillets: For best results, look for halibut fillets around 1-inch thick. Thinner portions cook faster (check at 4 1/2 minutes), while thicker cuts may need 1-2 minutes longer. Unlike other white fish, halibut is at its juiciest at 130-135 degrees internal temperature. It will continue cooking slightly after removal, so don't wait until it reaches 145 degrees, or it may dry out.
- Check basket: If using an air fryer basket that tends to stick, lightly spray with oil or use a parchment liner under the fish.
- Source matters: For the best results, invest in quality wild-caught Alaskan halibut. Its clean flavor and firm texture make it worth the splurge for this simple preparation that lets the fish shine. I source mine from Sena Sea, where it's flash-frozen at peak freshness right on the boat!
