Description

Get all the secrets to cooking tender halibut in the air fryer with a flavorful almond-parmesan crust. Ready in 10 minutes and foolproof every time!

Ingredients

Units Scale
  • 2 6-oz halibut fillets, thawed
  • 2 tablespoons Parmesan cheese, shredded
  • 2 tablespoons sliced almonds
  • 2 teaspoons mayo
  • 1 teaspoon lemon juice, plus wedges, for serving
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt

  • Pinch sweet paprika

Instructions

  1. Preheat air fryer. Mix parmesan cheese and sliced almonds in one small dish. In a second dish, mix mayonnaise, lemon juice, salt, garlic powder and paprika.
  2. Dry halibut fillets well with paper towels. Sprinkle lightly with kosher salt. Brush the top of each fish fillet in the lemon mayo, then sprinkle generously with a coating of the almond parmesan mixture.

  3. Air fry fish for 6-8 minutes at 390 degrees, or until the topping is golden brown and the fish is cooked through. Garnish with chives and lemon wedges.

Notes

  • Fillets: For best results, look for halibut fillets around 1-inch thick. Thinner portions cook faster (check at 4 1/2 minutes), while thicker cuts may need 1-2 minutes longer. Unlike other white fish, halibut is at its juiciest at 130-135 degrees internal temperature. It will continue cooking slightly after removal, so don't wait until it reaches 145 degrees, or it may dry out.
  • Check basket: If using an air fryer basket that tends to stick, lightly spray with oil or use a parchment liner under the fish.
  • Source matters: For the best results, invest in quality wild-caught Alaskan halibut. Its clean flavor and firm texture make it worth the splurge for this simple preparation that lets the fish shine. I source mine from Sena Sea, where it's flash-frozen at peak freshness right on the boat!
