    The traditional Nobu miso black cod recipe calls for a three-day marinade. Two keys to our speedier air fryer version:

    1. Cutting larger fillets in half not only speeds up marination but makes pin bone removal much easier after cooking.
    2. Our marinade ratio penetrates the fish quickly, delivering deep flavor in as little as 20 minutes.

    Tips From My Test Kitchen

    • Prevent sticking: Black cod's high fat content means it can stick easily. Always use parchment paper in your air fryer basket when making this miso black cod recipe.
    • Temperature matters: Black cod requires a little more cooking to break down into those signature buttery layers, so aim for 140°F internal temperature.

    Step-by-Step Guide to Air Fryer Miso Black Cod

    Step 1: Mix the marinade

    Combine miso, soy sauce, brown sugar, and chili crisp in a small bowl until you have a smooth paste.

    Dry fish fillets well and cut them in half, ideally along the center line where you can feel the pin bones. Coat the black cod pieces on all sides with the miso mixture, cover, and refrigerate. While 20 minutes works in a pinch, overnight marination delivers spectacular results.

    Step 3: Room temp rest + Air fry

    Before air frying, let the marinated fish sit at room temperature for 20 minutes to ensure even cooking from edge to center. Preheat your air fryer, brush the marinade to create an even coating, and cook until the internal temperature reaches about 140°F.

    Step 4: Garnish and serve

    Top with sesame seeds and sliced scallions and serve with lime wedges for the perfect bite.

    Dealing With Pin Bones

    One of the challenges with black cod fillets is their pin bones. The good news? Once cooked, they become much easier to spot and remove:

    • After air frying, you'll notice the pin bones protruding slightly along one edge of each piece
    • Simply use kitchen tweezers, kitchen shears, or even your fingers to gently pull them out before serving
    • By cutting the fillets before cooking (in Step 2), you've already made this process much easier

    Can I make this miso black cod recipe ahead for a dinner party?

    Absolutely! In fact, I recommend it. Prepare everything the night before – the longer marination will only enhance the flavor, and you'll only need about 10 minutes of actual cooking time the next day.

    Can I use regular cod instead of black cod for this miso recipe?

    Yes, but there are important differences. Regular cod is leaner and will cook faster (check at 5-6 minutes instead). The texture won't be as buttery, and the fish won't get the same kind of caramelization, but the flavor will still be delicious. For closest substitutes to black cod, Chilean sea bass works beautifully, or try salmon for a more budget-friendly option.

    How do I know when the air fryer black cod is perfectly cooked?

    The most reliable method is using an instant-read thermometer. I find 140°F is perfect to remove the black cod from the air fryer (it will go up a few degrees while resting). At this temperature, the fish will be luxuriously tender and buttery. Don't have a thermometer? You should see the fish separating into clear layers as it approaches doneness.

    Description

    This air fryer miso black cod fillet recipe delivers Nobu-style results in a fraction of the time! Perfect caramelization, buttery texture, and no 3-day marination.


    Ingredients

    • 2 (6-8-ounce) black cod (sablefish) fillets, cut in half
    • 2 tablespoons white miso paste
    • 1 tablespoon soy sauce
    • 1 tablespoon brown sugar
    • 1 teaspoon chili crisp
    • Sesame seeds, for garnish
    • Scallions, for garnish
    • Lime wedges, for serving

    Instructions

    1. In a small bowl, stir together miso paste, soy sauce, brown sugar, and chili crisp until well combined into a smooth paste.
    2. Pat black cod fillets very well with paper towels to remove excess moisture. Cut each fillet in half, ideally along the line where pin bones run.
    3. Coat fish pieces evenly with the miso paste mixture. Cover and refrigerate for at least 20 minutes and up to overnight (about 20 hours) for best flavor. Cook's Note: I've tested this air fryer black cod recipe with marination times of 20 minutes, 2 hours, 6 hours, and overnight. While overnight marination delivers the most developed flavor, even a quick 20-minute marinade produces delicious results you'll be proud to serve.
    4. Remove fillets from refrigerator and let sit at room temperature for 20 minutes before cooking.
    5. Preheat your air fryer to 375°F.
    6. Use a pastry brush to ensure a relatively even coating of miso glaze on the fish.
    7. If your air fryer basket is prone to sticking, cut heat-safe parchment to fit under the fillets to prevent sticking. Place the black cod fillets in the basket.
    8. Cook at 375°F for 7-10 minutes, checking at 5 minutes to see if the fillets need to be rotated for even browning. The fish is done when it reaches an internal temperature of 135°F.
    9. After cooking, you'll notice pin bones protruding along one edge. Gently remove them with your fingers, tweezers or kitchen shears before serving.
    10. Serve garnished with sesame seeds, scallions, and a lime wedge.
