Brown Butter Seared Scallops

Ingredients

For Scallops: butter sea scallops  neutral oil Salt and pepper For Polenta: fresh corn polenta or grits vegetable stock milk lemon fresh basil salt and pepper

Let's Get Cooking

1. Prep Corn Polenta

Combine stock, milk, salt and pepper in saucepan. Bring to simmer. Add polenta and stir to avoid lumping.

Cut charred corn off cob  and stir it into the cooked polenta. Taste and adjust seasoning. Set aside.

2. Cook Scallops

Add scallops to a hot skillet, with neutral oil and butter. Sear until golden brown. Flip and baste scallops in butter. Remove from pan.

Return skillet to stove and squeeze half lemon into it. Swirl the pan and scrape up any tasty bits at the bottom.

Prep  for Service

4. Take a bow, chef!

Top polenta with scallops and lemon brown butter sauce. Garnish with charred corn kernels and fresh basil.
