Ingredients:

FISH – tilapia – olive oil – salt & pepper – paprika – fresh parsley SAUCE – cold butter – fresh lemon juice – dry white wine – heavy cream – garlic clove

Let's Get Cooking

1. Prep Tilapia

Gently blot your fish fillets to dry. Lightly oil the bottom of a large baking dish with olive oil.

Place fillets in prepared baking dish. Sprinkle salt, pepper and paprika over the top of the fish. Bake.

2. Prep Sauce

While fish is baking, combine freshly squeezed lemon juice and white wine in a small, heavy saucepan.

Crush the garlic clove lightly on your cutting board and add to the pan with the wine and lemon juice. Simmer for 3 mins.

Add heavy cream to the pan and return to a simmer (this will only take about 30 seconds). Then remove the pan from the heat.

Begin adding pieces of butter to the hot pan and whisking as they melt to ensure a smooth emulsion

Remove the garlic clove from the sauce. Taste the sauce and add a pinch of salt, if needed.

3

Plate the tilapia, drizzle with lemon butter sauce and top with fresh parsley.
