Sun-dried Tomato Caper Butter

Description

The easiest way to add flavor to grilled fish, shrimp, chicken or steak. Toss in a bowl of warm pasta or melt over steamed veggies. This easy compound butter is the ultimate flavor-booster!


Ingredients

8 tablespoons butter, softened

1/3 cup sun-dried tomatoes in oil, coarsely chopped

2 tablespoons capers, coarsely chopped

2 tablespoons fresh chives, finely diced

1/2 teaspoon fresh ground black pepper

Salt, to taste


Instructions

  1. Combine softened butter, coarsely chopped sun-dried tomatoes and capers, along with black pepper, in a food processor. Pulse until combined. Season with salt to taste and stir in diced chives by hand.ย 
  2. Melt a tablespoon or two of tomato caper compound butter into a pan of sautรฉed shrimp, serve over Roasted Branzino, or with a Seared Salmon Fillet.ย 
  3. To store, roll compound butter into a piece of parchment paper. Seal well on both sides and store in a bag or airtight container.ย 

Notes

Can be served with fish, vegetables, pasta, poultry and meat.ย
