Ingredients
4 ounces whipped cream cheese
1 1/2 tablespoons mayonnaise
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon dry mustard
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
1 1/2 cups sharp cheddar, shredded (about 6 oz block)
1 cup cooked shrimp, coarsely chopped
1/2 cup diced roasted red peppers (or jarred pimentos)
1/4 cup scallions, diced, plus more for garnish
1 loaf baguette, thinly sliced (16-20 slices) and lightly toasted, for serving
Instructions
- Combine cream cheese, mayonnaise, Worcestershire sauce, dry mustard, garlic powder and cayenne, if using, in the bowl of a small food processor. Mix until well combined. Add whipped cream cheese mixture to the shredded cheddar, diced shrimp, roasted red peppers and diced scallions. Stir to combine.
- Chill mixture for 30 minutes. Taste and adjust seasoning.
- Preheat broiler to high and position oven rack about 5 inches from the coil. If making toasts, scoop chilled dip onto each slice of baguette and arrange on a foil-lined baking sheet.
- Broil for 2-3 mins, until golden brown. Remove, garnish with more diced chives, and serve with pickled red onions.
- Alternately, you can scoop the chilled pimento cheese shrimp dip into an oven-safe serving dish and broil for 3-5 minutes, until bubbly and brown. Garnish with diced scallions and serve with toasted baguette slices.
Notes
The recipe calls for whipped cream cheese, but if you're using regular blocks of cream cheese, just add a bit more mayo or half and half to thin the mixture just a little.
I prefer roasted red peppers in this recipe, but feel free to substitute jarred pimentos, if you prefer.
