Ingredients
Scale
- 2 haddock fillets
- 2 tablespoons Parmesan cheese, grated or shredded
- 2 tablespoons sliced almonds
- 2 teaspoons mayo
- 1 teaspoon lemon juice, plus wedges, for serving
- 1/4 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- Pinch sweet paprika
Instructions
- Preheat air fryer.
- Mix parmesan cheese and sliced almonds in one small dish. In a second dish, mix mayonnaise, lemon juice, salt, garlic powder and paprika.
- Dry haddock fillets well with paper towels. Sprinkle lightly with kosher salt. Brush the top of each fish fillet in the lemon mayo, then sprinkle generously with a solid coating of the almond parmesan mixture.
- Air fry fish at 390 for 6-8 minutes, or until the topping is golden brown and the fish is cooked through.
-
Garnish with chives or scallions and lemon wedges.
Notes
- Storage and Reheating: Best enjoyed immediately. If needed, store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer for 2-3 minutes to restore some crispness.
- Make it a meal: Serve with grilled asparagus or a simple tossed salad and lemon wedges for a complete meal ready in under 15 minutes.
- Fish substitutions: This recipe works beautifully with other firm white fish like cod, pollock, or halibut. For a budget-friendly option, try tilapia or swai. If you prefer a richer flavor, salmon fillets work wonderfully with this topping (just add 1-2 minutes to the cooking time).
