This foolproof air fryer haddock recipe delivers restaurant-quality fish in just 10 minutes! The crunchy almond topping and tender, flaky fish make a perfect weeknight dinner.


Ingredients

  • 2 haddock fillets
  • 2 tablespoons Parmesan cheese, grated or shredded
  • 2 tablespoons sliced almonds
  • 2 teaspoons mayo
  • 1 teaspoon lemon juice, plus wedges, for serving
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • Pinch sweet paprika

Instructions

  1. Preheat air fryer.

  2. Mix parmesan cheese and sliced almonds in one small dish. In a second dish, mix mayonnaise, lemon juice, salt, garlic powder and paprika. 

  3. Dry haddock fillets well with paper towels. Sprinkle lightly with kosher salt. Brush the top of each fish fillet in the lemon mayo, then sprinkle generously with a solid coating of the almond parmesan mixture.
  4. Air fry fish at 390 for 6-8 minutes, or until the topping is golden brown and the fish is cooked through.  
  5. Garnish with chives or scallions and lemon wedges.

Notes

  • Storage and Reheating: Best enjoyed immediately. If needed, store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer for 2-3 minutes to restore some crispness.
  • Make it a meal: Serve with grilled asparagus or a simple tossed salad and lemon wedges for a complete meal ready in under 15 minutes.
  • Fish substitutions: This recipe works beautifully with other firm white fish like cod, pollock, or halibut. For a budget-friendly option, try tilapia or swai. If you prefer a richer flavor, salmon fillets work wonderfully with this topping (just add 1-2 minutes to the cooking time).
