Portuguese Kale Soup (Vegetarian!)

Ingredients:

– extra virgin olive oil – onion and garlic – potatoes – vegetable stock – bay leaves – shredded kale  – salt and pepper – smoked paprika – red pepper flakes

Let's Get Cooking

1. Make Soup

Saute onions and garlic in olive oil until tender. Add salt, pepper, paprika and pepper flakes and allow spices to toast.

Add vegetable broth, diced potatoes and bay leaves. Simmer until potatoes are tender, then remove bay leaves.

Use a blender to pulse about half the soup, leaving chunks of potatoes and onion for texture.

Return the soup to burner and add shredded kale. Simmer until kale is tender. Next, prepare the garnish.

2. Cook Chips

Instead of traditional chorizo, garnish with potato coins! Slice potatoes and saute in olive oil until crisp. Season with salt, pepper and smoked paprika.

Ladle soup into bowls and garnish with crispy potato rounds.
