Ingredients:

– Walleye fillets – Flour – Salt and pepper – Egg – Italian bread crumbs – Parmesan cheese – Lemon juice & zest – Red pepper flakes – Butter and olive oil – Fresh arugula

Let's Get Cooking

1. Dredge Walleye

Mix flour, salt & pepper on plate. Combine egg and water on second dish. Mix bread crumbs, parmesan, lemon zest and red pepper in third dish.

Coat each fillet first in the flour, then the egg mixture, then dip fillets in the parmesan breadcrumbs.

2. Pan Fry Walleye

Cook fillets in hot oil and butter for 3-4 minutes per side. Sauté until golden brown and crispy on the outside and cooked through in the center.

Combine olive oil, lemon juice, salt and pepper in a measuring cup. Pour dressing over arugula and toss.

Prep  for Service

4. Serve!

Plate each crispy walleye fillet topped with arugula salad, parmesan shavings and a lemon wedge.
