Middle Eastern Yellow Rice

Ingredients:

– Basmati rice – Butter – Yellow onion – Fresh garlic – Ground turmeric – Ground cumin – Veggie stock – Sea salt – Fresh parsley – Pine nuts

Let's Get Cooking

1. Prep vegetables

Sauté diced onion and minced garlic in butter until they are tender and fragrant.

2. Rice & Spices

Add basmati, turmeric, cumin and salt to the butter and vegetables. Stir well to coat the rice in the spices and butter.

Pour veggie stock over the rice and stir well. Bring to a boil, then reduce to low and cover, cooking until the liquid has absorbed and the grains are tender.

3. Finishing touches

Once tender, cover the pot with several paper towels and replace the lid over the paper towels to allow the remaining steam to absorb. Leave covered for 10 mins.

Fluff the rice with a fork. Top with fresh chopped flat leaf parsley and toasted pine nuts.
