Grilled Mexican Street Corn Casserole

You are going to LOVE this  grilled Mexican street corn casserole because it's simple to prepare with a handful of ingredients, but it brings big charred corn flavor in a creamy casserole with the perfect touch of spices and lime. 

Ingredients: Oil Corn Mayo Sour cream Garlic Cotija, queso fresco  (or feta) Scallions Cilantro Limes Chili powder Smoked paprika

Step 1: Add oil and corn to hot skillet. Spread out kernels and leave untouched until they have browned deeply, about 5 mins.

Step 2: Mix mayo, sour cream, garlic, cheese, scallions, cilantro, lime juice and chili powder well in a bowl. Set aside.

Step 3: Add charred corn to the creamy mixture and stir well to combine.

Step 4 : Spoon into baking dish. Sprinkle with chili powder and crumbled cheese. Bake until browned and bubbly!

Top with cilantro and lime slices. Serve hot or room temperature.
