These tasty lobster tails are a great frozen seafood staple to keep on hand and the easiest way to create a restaurant-quality risotto dish  in a flash

Ingredients:

langostino tails arborio rice garlic shallots asparagus parmesan mascarpone salt and pepper olive oil  butter lime zest stock chives

Let's Get Cooking

1. Saute veggies

Dice then saute asparagus until cooked but crisp. Set aside. 

Saute shallot and garlic until tender. Add white wine and simmer until reduced. 

2. Risotto Time!

Add arborio rice and toss. Then start adding a ladle of warm broth at a time and stirring while it cooks and absorbs the broth.

Keep adding broth and stirring until the rice is tender and cooked through.

3. Flavorful additions

Add langostino tails, asparagus, parmesan, mascarpone, lime zest, chives, salt and pepper. Stir until creamy.

Garnish finished risotto with more shredded parm, diced chives and a wedge of lime.
