Italian White Beans & Greens

Whether you want to start the new year with a lucky beans and greens dish, or you're just looking for a hearty and flavorful stew for chilly dinners, this classic Italian recipe is just what you need!

Ingredients:

– Olive oil – Yellow onion – Fresh garlic – Salt, pepper, red pepper flakes – Escarole (or kale) – Vegetable broth – White beans – Parmesan – Lemon

Let's Get Cooking

1. Build Veggie Stew

Saute onion, garlic, red and black pepper and a pinch of salt until tender and fragrant.

2. Prep Escarole

Clean and cut escarole. If substituting kale or another hearty green, remove woody stems.

Add escarole to pan with onions and spices. 

3. Combine Beans

Add drained white beans and vegetable stock to the pan. Cook until greens are fully wilted and beans are heated through

Remove from heat. Add the fresh lemon juice and stir in half the parmesan.

Serve steaming bowls of beans and greens with more parmesan, a drizzle of olive oil and crusty Italian bread.
