Hibachi Fried Rice (Benihana Copycat)

Ingredients:

safflower oil eggs yellow onion carrot scallions cooked rice salt & pepper light soy sauce sesame seeds butter fresh garlic

Let's Get Cooking

1. Prep Garlic Butter

Mix together softened butter, grated garlic and light soy sauce. Set aside.

2. Cook Eggs

Scramble eggs in a hot skillet with a bit of neutral oil and a pinch of salt and black pepper. Cook well, cutting into small pieces. Set aside.

3. Cook Vegetables

Add more oil to the pan, along with diced onion and carrots, and a pinch of salt and pepper. Cook until softened and fragrant.

Add scallions to the pan and toss for about 30 seconds. 

Add the cooked vegetables to the bowl of cooked eggs. Wipe out pan and return to heat.

4. Fry Rice

Add oil to the hot skillet, along with chilled rice, salt and pepper. Toss and heat the rice through.

Add cooked veggies, eggs, and garlic butter. Toss, letting the butter melt. Season with more pepper.

Scrape the rice to the side and pour soy sauce onto the pan, letting the sauce sizzle up for a few seconds and thicken.

Once it's thickened, fold the rice into the soy glaze, tossing and cooking until it is combined and evenly browned. Add the sesame seeds.

Serve hot fried rice with sliced scallions, yum yum sauce and chili crisp.
