Grilled Shrimp Skewers

with Pistachio Chimichurri

Ingredients:

– shrimp – olive oil – salt and pepper – zucchini – parsley – cilantro – onion – pistachios – jalapeño – garlic  – citrus zest and juice – red wine vinegar – oregano

Let's Get Cooking

1. Make Chimichurri

Combine herbs, red onion, jalapeño, garlic, vinegar, citrus juices and zest in a food processor and mix.

After mixing, add chopped nuts, a pinch of salt and pepper and the olive oil. Mix well. Set aside.

2. Prepare Skewers

Use a vegetable peeler to create zucchini ribbons. Alternate between shrimp and zucchini on skewers.

3. Grill!

Drizzle with olive oil, salt and pepper. Cook on outdoor grill or indoor grill pan. 

Serve skewers with pistachio chimichurri and grilled lemon halves.
