Garbanzo Bean Soup

Ingredients:

– Fresh cilantro – Parmesan cheese – Fresh jalapeno – Lemon zest & juice – Smoked paprika – Salt and pepper – Olive oil – Crusty sourdough – Fresh garlic – Scallions – Vegetable stock –  Chickpeas – Eggs

Let's Get Cooking

1. Make Pesto

Combine cilantro, parm, jalapeno, lemon zest and juice, garlic, scallions, smoked paprika, salt and pepper in a food processor.

Combine until pesto-like in texture. Add in 1/3 cup olive oil and pulse 2-3 times. Taste and adjust seasoning. Set aside.

2. Make Croutons

Toss the bread pieces in a small bowl with olive oil, smoked paprika, salt and pepper. Toast well in a large pan until golden brown.

3. Cook Chickpeas

In the same pan, add olive oil and diced garlic. Sauté until fragrant and tender.

Add broth and garbanzo beans and simmer until the beans are heated through.

Remove from heat and stir in the fresh cilantro pesto. Taste and adjust seasoning.

Pour soup over toasted bread in bowls and top each with a soft boiled egg. Garnish with fresh cilantro and serve.
