Duchess Potato Casserole

Ingredients:

– Heavy cream – Egg yolks – Salt, black pepper, white pepper – Potatoes – Butter – Nutmeg

Let's Get Cooking

1. Prepare potatoes

Peel, dice and boil potatoes in salted water. Drain well. 

Use food mill or potato ricer to process the hot potatoes until smooth.

2. Season potatoes 

Add butter, cream, spices and egg yolks to the slightly cooled potatoes.

Combine until the potato mixture is smooth and a golden yellow color. Spoon half the mixture in a buttered dish.

Add the remaining potato mixture into a piping bag.

3. Classic piping!

Pipe large swirls across the top of the layer of smoothed potato mixture. Refrigerate for 30 mins.

Gently brush the potato swirls with melted butter, then bake until golden brown. 

Take a bow, chef!
