Ingredients:

butter onion fresh garlic tomato paste Calabrian chili paste vodka heavy cream Parmesan cheese rigatoni pasta coarse sea salt fresh basil + EVOO, for serving

Let's Get Cooking

1. Build Sauce

Saute diced onions in butter for 5-6 mins. Add minced garlic and salt. Cook until tender.

Add tomato paste and Calabrian chili paste. Cook 5-6 mins. Add vodka and deglaze pan. 

Add Parmesan, stir into the creamy sauce and remove from heat.

2. Add Pasta

Add the al dente rigatoni to the sauce, along with hot pasta water.

Garnish finished pasta with a drizzle of olive oil, grated Parmesan and fresh basil.
