Blackened Fish Sandwich

Ingredients:

grouper (or favorite white fish) blackening seasoning  (homemade or store-bought) butter brioche buns leaf lettuce sliced tomato red onion pickles lemon wedges

Let's Get Grill ing

1. Make Seasoning 

Begin by making blackened seasoning (skip if using store-bought seasoning) Combine all of the dry spices in a small bowl and mix well.

2. Cook Fish

Melt butter. Use a pastry brush to cover one side of grouper fillets in butter, then cover with the seasoning mix.

Sear (seasoned side down) in a hot skillet for about 3 mins to build a golden brown crust.

Before flipping, brush top of fish with butter and sprinkle with remaining seasoning.

Flip gently. Cook for 3-4 minutes on the second side, or until fish is cooked through.

Lightly grill buns. Layer blackened fish with lettuce, tomato, onion, pickles and tartar sauce.
